Easy Vegetable Soup with Pasta

MAKES 1 SERVING | 1 (20 oz/625 g) microwave mug with vented cover

 

Let those cold winter winds blow, and stay snug inside. This delicious soup will chase away the chill.

  • 3⁄4 cup (175 mL) frozen mixed vegetables
  • 1⁄4 cup (60 mL) crumbled cooked ground beef or ground turkey (optional)
  • 1⁄3 cup (75 mL) cooked small shell pasta
  • 1 cup (250 mL) vegetable juice cocktail or tomato juice
  • 1⁄2 tsp (2 mL) dried Italian seasoning Salt and ground black pepper

In the mug, combine vegetables, beef (if using) and pasta. Stir in the juice and Italian seasoning. Season to taste with salt and pepper.

Microwave, covered, on High for 31⁄2 to 4 minutes. Let rest 1 minute. Stir.

Combine ingredients in the mug as directed in Step 1. Cover mug, close vent and pack with ice packs. When ready to eat, open vent and continue as directed in Step 2. If vegetables are thawed, reduce cooking time to 3 minutes.

tip

To make this soup quick to prepare, store cooked ground beef and cooked pasta in premeasured small ziplock bags in the freezer. If meat and pasta are frozen, increase cooking time by about 1 minute or until soup is hot.


Buffalo Chicken with Cauliflower

MAKES 1 SERVING | 1 (20 oz/625 g) microwave mug with vented cover

Those famous Buffalo wings are the inspiration for this delicious recipe. Expecting hot and spicy chicken wings with a side of celery and maybe a blue cheese dip? Those flavors are all here in this easy-to-prepare mug meal.

  • 1 cup (250 mL) finely chopped cauliflower
  • 1⁄2 cup (125 mL) chopped cooked chicken
  • 1⁄4 cup (60 mL) finely chopped celery 2 tbsp (30 mL) Buffalo wing sauce
  • 2 tbsp (30 mL) ranch dressing Salt and ground black pepper
  • 2 tbsp (30 mL) grated Parmesan cheese
  • Blue cheese crumbles (optional)

In the mug, combine cauliflower, chicken and celery. Stir in wing sauce and ranch dressing. Season to taste with salt and pepper.

Microwave, covered, on High for 3 minutes. Stir in Parmesan cheese. Cover and let stand for 1 minute. Sprinkle with blue cheese (if using).

Combine ingredients in the mug as directed in Step 1. Cover mug, close vent and pack with ice packs. Pack Parmesan cheese and blue cheese (if using) in separate containers or ziplock bags with ice packs. When

ready to eat, open vent and continue as directed in Step 2.

tip

If you want to make your Buffalo Chicken with Cauliflower milder, increase ranch dressing to 3 tbsp (45 mL) and reduce wing sauce to 1 tbsp (15 mL). For more spice, increase wing sauce to 3 tbsp (45 mL) and reduce ranch dressing to 1 tbsp (15 mL).
