South-of-the-Border Dressing
This hot spicy dressing is a good match for a Mexican dinner, and is perfect on a taco salad.
Makes 1-1/2 cups
4 ounces cream cheese, softened
1/2 cup buttermilk
1/2 cup mayonnaise (store bought, or Traditional Mayonnaise, page 106)
1 avocado
2 teaspoons fresh dill
1 teaspoon freshly squeezed lemon juice
2 chipotle peppers in adobo sauce, drained
In a food processor fitted with a metal blade, process cream cheese, buttermilk, mayonnaise, avocado, dill, lemon juice, and chipotle peppers until smooth, about 45 seconds.
Tip
Make sure your avocado is ripe for the best flavor and texture.
